What each ingredient does

Horseradish
Provides the sharp, pungent heat that defines the sauce.
Heavy cream
Adds fat and body, softening the sharpness of the horseradish.
Vinegar
Adds acidity that sharpens flavour and helps preserve the sauce.

The step that matters

Heating the sauce without boiling. Boiling cream can cause it to separate and become grainy, and high heat drives off the volatile compounds that give horseradish its pungency. Heating gently over low heat keeps the sauce smooth and sharp.

Swap the horseradish

How well each one fits the dish's main ingredients (cream, vinegar):

  2. Horseradishthe original
