To Roast Pigeons

Ingredients

Directions

Prepare

  1. Prepare the pigeons by removing the heads, necks, and toes at the first joint.

  2. Draw the pigeons carefully and rinse them with plenty of water. Wipe them dry.

  3. Insert a small piece of butter lightly dipped in cayenne pepper into each bird.

  4. Truss the wings over the backs.

Roast and serve

  1. Roast them at a brisk fire, basting the pigeons constantly with butter while roasting.

  2. Roast for about 18 to 20 minutes, longer if they are large, and less if they are very young.

  3. Serve with brown gravy and a tureen of parsley and butter, on a bed of young watercress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young pigeons
Provide the main meat, which cooks quickly and stays tender when roasted hot and briefly.
Butter
Adds moisture and richness, and its basting helps the skin brown and stay juicy.
Cayenne pepper
Adds gentle heat and aroma to the butter inserted into each bird.

The step that matters

Roast at a brisk fire and baste constantly. Small birds dry out quickly if overcooked, so a hot oven and frequent butter basting help the skin brown while keeping the meat moist. Timing should be checked since very young birds cook faster.

Swap the parsley

How well each one fits the dish's main ingredients (butter, pepper, watercress):

  1. Capersfits about as well
  2. Parsleythe original
  3. Tarragonfits about as well
  4. Thymefits less well

Fit is the average pairing score against butter, pepper, watercress. Candidates are from the same food group and used in at least 100 recipes.
