What each ingredient does

Cauliflower
Forms the main body of the dish and becomes tender and mild when boiled.
Melted butter
Adds richness and fat that complements the mild, cooked flavour of the cauliflower.

The step that matters

Boil until the stalks are tender. Stalks are denser than the florets, so they need longer to soften. Checking that the thickest stalks are tender, rather than judging by the florets, prevents a firm center or mushy florets.
