Mince Pies Royal

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Combine mincemeat, pounded sugar, lemon rind, lemon juice, clarified butter, and egg yolks in a bowl and beat well together.

  2. Fill pattypans lined with fine pastry about half full with the mixture.

  3. Bake in a moderate oven (350°F / 175°C) until just set.

Ice and finish

  1. Beat egg whites until stiff in another bowl, then quickly mix in pounded sugar.

  2. Ice the pies thickly with the egg white mixture.

  3. Return to the oven and bake slowly until they are a fine light brown.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mincemeat
Provides the main filling, sweetness and spiced fruit flavour.
Egg yolks
Bind the filling and help it set when baked.
Egg whites
Whipped into a meringue topping that bakes to a light brown crust.
Clarified butter
Adds richness and moisture to the filling.
Pounded sugar
Sweetens the filling and the meringue topping.

The step that matters

Folding the sugar into the whites. Egg whites beaten until stiff hold their foam only if sugar is added quickly, before they lose volume. Overbeating or delay can make the topping weep or collapse in the oven.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (sugar, butter, egg):

  1. Vanillabetter flavor fit
  2. Lemonthe original
  3. Raisinabout as good a flavor fit
  4. Figabout as good a flavor fit

Fit is the average pairing score against sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
