Why it works: Peach and apricot match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 342 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓

Apple, Peacit, Apricot, or Orange Fritters

Ingredients

Directions

  1. Pare and core the apples without dividing them, then slice into rounds.

  2. Dip the apple slices into the batter and fry until pale brown and dry.

  3. Serve the fritters heaped on a folded napkin and sprinkle with sifted sugar.

  4. For oranges, remove the outer rind and white inner skin, slice, and remove the seeds.

  5. Dip the orange slices into the batter and fry as with the apple fritters.

  6. For peaches and apricots, skin, halve, and stone them before dipping in batter.

  7. If not fully ripe, stew peaches and apricots in a thin syrup until tender.
