Baked Puddings

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the egg yolks one at a time, mixing well after each addition.

  3. Squeeze the juice of the lemon into the mixture and stir.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the egg whites into the mixture.

Bake

  1. Pour the mixture into a baking dish lined with thin puff pastry.

  2. Bake for 45 minutes in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and a tender texture when creamed with sugar.
Egg yolks
Add richness and help set the custard as it bakes.
Egg whites
Whipped to stiff peaks, they lighten the mixture and help it rise.
Lemon
Provides acidity and bright lemon flavour.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that gives lightness. Stirring them vigorously deflates the foam, so fold gently until just combined.
