Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White granulated sugar
Forms the brittle, glassy structure of the rock as the syrup cools and hardens.
Sweet almonds
Provide the crunchy texture and bulk that break up the hard sugar matrix.
Cream of tartar
Acidity that helps prevent the sugar from crystallising into a grainy texture.

The step that matters

Boil to the crack stage. The sugar concentration reached at the crack stage determines how hard the set almond rock becomes. Stopping early leaves it soft and sticky, while overcooking leads to a bitter, burnt taste.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sugar, cream, almond):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, cream, almond. Candidates are from the same food group and used in at least 100 recipes.
