Rose and Lemon Toffee

Ingredients

Directions

  1. Boil 7 lbs of lump sugar and ½ oz of cream of tartar until it reaches the crack stage.

  2. For lemon toffee, add a little saffron and essence of lemon, then pour into tin frames or on a pouring plate.

  3. For rose toffee, color with cochineal and flavor with a few drops of otto of roses, then pour in the same manner.

  4. When the toffee is poured, mark it with a knife to create bars before it cools completely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lump sugar
Forms the main body of the toffee and sets into a brittle, glassy texture as it cools.
Cream of tartar
Acid that helps keep the sugar smooth and prevents crystallization during boiling.

The step that matters

Marking the toffee before it cools completely. Once the sugar cools and hardens, it becomes brittle and can crack unevenly, so bars must be scored while it is still warm and pliable.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, saffron, rose):

  1. Vanillafits better
  2. Lemonthe original
  3. Orangefits about as well
  4. Raisinfits less well

Fit is the average pairing score against sugar, cream, saffron, rose. Candidates are from the same food group and used in at least 100 recipes.
