Raspberry Sandwich

Oven, in the book's wordsA moderately quick oven

Ingredients

Directions

The book says “a moderately quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the puff pastry to about ½ inch thick.

  2. Cut the pastry into strips 3 inches long and ½ inch wide.

  3. Place the strips on a baking sheet with the cut side facing up, spacing them 3 inches apart.

  4. Bake in a moderate oven at 350°F (175°C) until they spread out like a fan.

  5. Remove from the oven and dust with powdered sugar.

  6. Return to the oven for 1 minute to melt the sugar and glaze the pastries.

  7. Once done, form a sandwich by spreading raspberry jam between two pieces.
