Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potato

  1. Pass the hot potatoes through a sieve.

  2. Add the butter, beaten egg, salt, and pepper.

Pipe and bake

  1. Transfer the potato mixture to a piping bag fitted with a large rose pipe.

  2. Pipe the potato onto a greased baking tin in rose shapes.

  3. Brush the roses lightly with beaten egg.

  4. Bake in a moderate oven at 350°F (175°C) until golden brown.

Finish

  1. Carefully remove and sprinkle with chopped parsley and a little pepper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the body of the roses, giving a soft, fluffy interior when cooked.
Butter
Adds richness and softness, helping the piped mixture hold its shape and taste rich.
Egg
Binds the mixture and, brushed on top, promotes an even golden browning in the oven.

The step that matters

Piping the rose shapes. The mash must be smooth and firm enough to hold its ridges. Lumps or a loose mixture can clog the pipe or slump in the oven, losing the rose shape.
