Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Pigeon Pie
Ingredients
Directions
Clean the pigeons and cut off their feet to use as decoration.
Cut the pigeons in half and the steak into 3-inch square pieces.
Boil the eggs hard, remove the shells, and roll the yolks in finely chopped parsley.
Mix black pepper, coarse sea salt, and pounded mace or nutmeg, then rub this mixture over the pigeon pieces.
Layer steak in a pie dish, followed by the parsley-coated yolks, then the pigeon halves.
Add a layer of bacon strips on top, then another layer of steak and any remaining seasoning.
Half fill the dish with well-flavored stock.
Wet the edges of the dish and place a strip of puff pastry around it, sealing the pie.

Swap the mace
How well each one fits the dish's main ingredients (egg, pepper, parsley):
- Dillfits better
- Tarragonfits better

- Macethe original
Fit is the average pairing score against egg, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
