  1. Pare the cucumber and cut it into pieces about three inches long.

Fry and make the gravy

  1. Melt the butter in a stewpan and add the cucumber pieces.

  2. Fry until they are a pale golden color, then remove the pieces.

  3. Stir the flour into the butter and fry together for 1-2 minutes.

  4. Gradually stir in the stock and bring to a boil.

  5. Add the cucumber pieces and simmer until tender.

  6. If needed, add pepper and salt for flavor.

  1. Carefully lift the cucumber out and place it on a hot vegetable dish.

  2. Pour gravy over the cucumber and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumber
Forms the main vegetable, becoming tender and soft when simmered in the stock.
Butter
Fat for frying the cucumber and cooking the flour, adding richness and a golden colour.
Flour
Thickens the butter and stock into a gravy that coats the cucumber.
Brown stock
Liquid that forms the gravy and adds savoury flavour.

The step that matters

Drying the cucumber pieces well. Excess surface water makes the cucumber steam instead of browning in the butter, and it dilutes the gravy when the pieces are returned to the pan.

Swap the cucumber

How well each one fits the dish's main ingredients (butter, flour, pepper):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
