Sorbet

Ingredients

Directions

  1. Cook the mixture until quite soft.

  2. Add the strained juice of the lemons and enough apple-green coloring to achieve a pretty color.

  3. Rub the mixture through a fine sieve.

  4. Prepare the freezing machine and pour in the mixture, then partly freeze.

  5. When partly frozen, add the brandy (or maraschino).

  6. Freeze well until it reaches a dry state.

  7. Chill the sorbet cups or tumblers in a cool place.

  8. Divide the sorbet into the chilled glasses and serve immediately on lace papers.
