What each ingredient does

Raspberry jam
Adds sweetness and concentrated raspberry flavor to the ice cream.
Cream
Provides fat for a rich, smooth texture.
Milk
Adds moisture and dilutes the richness of the cream.
Lemon
Its acidity brightens the raspberry flavor.

The step that matters

Press the mixture through a sieve or strain it. Straining removes seeds, pulp and any lumps of jam. Leftover solids can make the frozen ice cream grainy or uneven in texture.
