Neapolitan Ices

Ingredients

Directions

  1. Prepare four different ices: raspberry, lemon, chocolate, and plain cream in separate freezers.

  2. Layer the ices in a pewter mould, using an ice spoon to level each layer.

  3. Press the cover down to make the ice solid and firm.

  4. If you have an ice cave, place the mould inside to freeze completely.

  5. If no ice cave is available, surround the mould with ice and coarse sea salt, ensuring the joints are watertight with melted mutton fat.
