Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the bulk of the fruit and body for the marmalade.
Sugar
Sweetens the marmalade and helps it thicken and set as it boils.
Lemons
Add acidity and aroma from the rind, and acidity from the juice.

The step that matters

Remove all scum before adding the fruit. Scum is foam made of impurities rising during boiling. Removing it before adding the fruit keeps the marmalade clear and avoids off flavors.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Tomatothe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
