What each ingredient does

Sausages
Provide the main protein and fat, which render and brown in the hot pan.
Butter
Adds fat and flavour to the pan, and its milk solids help the surface brown.

The step that matters

Cook the sausages through. Sausages can brown outside before the centre is cooked. Heat must travel inward, so larger sausages need longer. Turning them evenly exposes all sides to the pan and helps the heat reach the middle.
