Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the rice mixture

  1. Boil the rice in milk until very soft.

  2. Add the butter and let it sit for a few minutes to cool.

  3. Well beat the eggs and stir them into the rice mixture.

Assemble and bake

  1. Line a dish with puff pastry.

  2. Layer the rice mixture, then a thin layer of jam, and repeat until the dish is full.

  3. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Serve

  1. Serve hot or cold.

  2. If cold, improve with boiled custard poured over it.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Softens in milk to form the bulk and creamy body of the pudding.
Butter
Adds richness and fat, giving the filling a smoother, softer texture.
Eggs
Beaten into the rice, they help the filling set when baked.
Jam
Adds sweetness and fruity flavour in thin layers through the pudding.
Milk
Softens the rice and provides the liquid that makes the filling creamy.

The step that matters

Stir the beaten eggs into the rice mixture. Eggs set when heated, so they should be well beaten and mixed evenly into the rice. If the rice mixture is too hot when they go in, the eggs can scramble instead of blending smoothly.
