Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the paste and thickens the filling so it holds its shape.
Lard
Adds fat that makes the paste short and tender rather than tough.
Lemon juice
Provides acidity and bright lemon flavour that balances the sweetness.
Sugar
Sweetens the filling and helps give it a stiff, spreadable body.

The step that matters

Securing the ends and tying the cloth. If the roll is not sealed and tied firmly, the filling can leak out or water can enter during the two hours of boiling. The floured cloth keeps the pudding from sticking to the cloth as it cooks.
