Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the lemon liquid into a light, wobbly structure as it cools.
Whites of 3 eggs
Whipped into foam, they lighten the mixture and give the snow its airy texture.
Lump sugar
Sweetens the lemon base and balances the sharpness of the juice.
Fresh lemons
Supply the juice and rind that give the dessert its bright lemon flavour.

The step that matters

Whipping the egg whites after cooling. The mixture must thicken slightly before the egg whites are added. If it is still hot or too thin, the foam collapses and cannot hold its volume, so the snow turns out dense rather than airy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
