Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Whisk together the eggs and sugar for about 20 minutes.

  2. Gently mix in the flour.

  3. Sprinkle in the baking powder and pour the mixture into a well-buttered baking sheet.

Bake and roll

  1. Bake at 400°F (200°C) for nearly 15 minutes.

  2. Turn the cake onto a sheet of white paper sprinkled with sugar.

  3. Spread with raspberry jam and roll up while hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked to trap air, giving the sponge its light, airy structure.
Sugar
Sweetens the cake and helps stabilise the whisked egg foam.
Flour
Provides the structure that holds the sponge once it is baked.
Baking powder
Releases gas in the oven, helping the cake rise.
Raspberry jam
Adds sweetness, fruity flavour and moisture to the filling.

The step that matters

Roll up while hot. The sponge is pliable only while warm; once cooled it becomes brittle and cracks when rolled, so it should be rolled promptly after spreading the jam.

Swap the raspberry

How well each one fits the dish's main ingredients (egg, sugar, flour):

  1. Raisinfits better
