Lievre Roti

Ingredients

Directions

  1. Remove the thick bluish skin from the hare's legs and sides by briefly holding it over a clear fire.

  2. Lard the hare all over with small lardoons using a larding needle.

  3. In a deep dish, combine water, vinegar, onion, thyme, bay leaf, parsley, pepper, salt, and butter.

  4. Simmer the marinade for 5 minutes, then let it cool.

  5. Pour the marinade over the hare the day before roasting, basting occasionally.

  6. When ready to roast, strain the marinade and baste the hare with it.

  7. Fry the liver in butter, mash it, and mix it with the blood from the chest.

  8. Combine this mixture with the remaining marinade and the drippings from the roasting pan, then pour over the hare before serving.
