Why it works: Lemon and almond match in chemistry and in kitchens. They rank in the top 10% of all ingredient pairs, and cooks put them together in 5,655 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓
Almond Toffee
Ingredients
Directions
Make the toffee
Combine butter, brown sugar, water, and half the lemon rind in a saucepan and boil together.
Drop a small amount into cold water; if it hardens and is crisp, it is done.
Once boiling ceases, stir in the lemon juice.
Set and finish
Blanch the almonds, halve them, and place them flat side down on a buttered shallow tin.
Allow the toffee to cool; it will be easy to remove from the tin.
For a variation, omit the almonds and lemon and add a little vanilla flavoring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Brown sugar
- Provides sweetness and, once boiled, forms the hard, crisp toffee structure.
- Butter
- Adds fat and richness, giving the toffee a smooth, tender bite.
- Almonds
- Add crunch and a nutty flavor and texture against the toffee.
- Lemon
- Adds acidity and bright aroma to balance the sweetness of the sugar.
The step that matters
Testing the toffee in cold water. Dropping a little into cold water shows whether the sugar has reached the hard, crisp stage. Stopping too early leaves the toffee soft and sticky, while cooking too far turns it bitter and dark, so the test matters.
