What each ingredient does

Cream
Whipped into a stiff froth, it traps air and gives the dessert a light, airy body.
Gelatine
Sets as it cools, firming the whipped mixture so it holds its shape when chilled.
Apricot jam
Adds sweetness, fruit flavour and colour to the cream.
Caster sugar
Sweetens the cream and dissolves easily into the mixture.

The step that matters

Work quickly to combine all ingredients. Gelatine begins to set as it cools, so mixing promptly keeps it evenly distributed and prevents lumps. Overworking the whipped cream would deflate its air, so combine just until uniform.

Swap the apricot

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Apricotthe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
