Potato Souffle

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the potatoes

  1. Scrub the potatoes well in cold water.

  2. Bake the potatoes in a 350°F (175°C) oven for 30-45 minutes, testing with a skewer.

  3. Cut off the tops of the baked potatoes and scoop out the insides without breaking the skins.

  4. Pass the potato flesh through a sieve until smooth.

Make the base

  1. Melt the butter in a saucepan.

  2. Add the milk, pepper, and salt.

  3. Bring the mixture to a boil.

  4. Stir in the potato flour until heated through.

  5. Remove from heat and stir in the egg yolks one at a time, mixing well after each addition.

Whip and fold

  1. Whip the egg whites to stiff peaks.

  2. Fold the whipped egg whites gently into the potato mixture.

Fill and bake

  1. Fill the potato skins two-thirds full with the mixture and place upright in a baking tin.

  2. Bake in a 400°F (200°C) oven for 7-10 minutes until puffed and set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the filling and give the soufflé its body and structure.
Butter
Adds fat for richness and a smoother, silkier texture in the base.
Milk
Supplies moisture that loosens the potato into a pourable base.
Egg yolks
Enrich the base and help it set as it bakes.
Egg whites
Whipped foam traps air, providing the lift that makes the soufflé puff.

The step that matters

Fold the whipped egg whites gently. Whipped whites hold air in a fragile foam. Vigorous stirring deflates it, leaving the mixture dense and unable to rise properly in the oven.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, butter, milk, egg):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against potato, butter, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
