What each ingredient does

Rice
Forms the body of the pudding as it simmers and softens in the milk.
Milk
Cooks with the rice to create the creamy, moist base of the pudding.
Egg
Helps bind the pudding and sets it as it cooks, giving it structure.
Sugar
Adds sweetness and balances the flavor of the milk and egg.
Raisins
Add pockets of concentrated sweetness and chewy texture to the finished pudding.

The step that matters

Adding the egg mixture after simmering. Egg proteins set when heated, so adding the egg to hot rice without stirring well can cause uneven or lumpy texture. Stirring thoroughly and waiting until the rice has simmered helps the egg blend in smoothly and set evenly.

Swap the raisin

How well each one fits the dish's main ingredients (milk, rice, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against milk, rice, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
