Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Clean the plaice and remove the eyes, fins, and tail.

  2. Place the fish in a baking dish with the white side facing up.

  3. Pour ½ cup of milk around the fish.

  4. Dot the top with butter or dripping.

Bake and serve

  1. Bake at 350°F (175°C) for about 45 minutes, basting occasionally.

  2. Thicken the milk with 1 tablespoon of flour.

  3. Season the sauce with salt and pepper.

  4. Pour the sauce over the fish.

  5. Add finely chopped parsley to the sauce if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Plaice
Forms the main body of the dish, cooking into moist, flaky fish.
Milk
Forms the base of the sauce, which gently cooks and moistens the fish.
Butter or dripping
Adds fat and richness, helping the top brown and flavour the dish.
Flour
Thickens the milk into a smooth sauce that clings to the fish.

The step that matters

Thicken the milk with flour. Flour must be fully mixed into the milk so it does not form lumps. Starch thickens the sauce as it heats, so stirring it smooth before and during baking gives an even, silky sauce rather than a grainy one.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (milk, butter, flour, pepper):

  1. Cinnamonfits better
  2. Nutmegfits about as well
  3. Cardamomfits about as well
  4. Parsleythe original

Fit is the average pairing score against milk, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
