Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Puff Pastry
Ingredients
Directions
Sift the flour to remove lumps.
Wrap the butter in a clean cloth and squeeze out moisture.
In a bowl or on a marble slab, make a well in the flour and add salt, lemon juice, and egg yolk.
Gradually add cold water and mix with your fingers to form a soft, elastic dough.
Knead the dough until smooth, then roll it out to about ¼ inch thick.
Press the butter to half the size of the rolled pastry and place it on the dough, ¼ inch from the edge.
Fold the pastry over the butter and lightly press the edges together.
Roll out the pastry again, ensuring the butter does not surface.
Fold the dough into thirds and let it rest in a cool place for 15 minutes.
With the open edges facing you, roll out again and fold into thirds as before, resting for another 15 minutes.
Repeat this process until the pastry has been rolled out seven times after adding the butter.
