Cream Slippers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pastry shells

  1. Roll out the puff pastry to ¼ inch thick.

  2. Cut into strips about 1 inch wide.

  3. Wet one side of each strip.

  4. Carefully fold it around a greased cornet or slipper mold, ensuring the edges join well.

  5. Brush the folded pastry with beaten egg.

  6. Place the slippers on a greased baking sheet.

  7. Bake at 400°F (200°C) for about 10 minutes.

  8. Remove the molds.

  9. Let the pastry cool.

Fill and garnish

  1. Half fill each slipper with jam.

  2. Fill each slipper with whipped and sweetened cream.

  3. Garnish with red sugar and chopped, blanched pistachio nuts.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the crisp, flaky shell that holds the filling.
Thick cream
Provides the rich, airy filling when whipped and sweetened.
Egg
Beaten egg brushed on the pastry promotes browning during baking.
Castor sugar
Sweetens the cream and dissolves easily into it.
Jam
Adds fruity sweetness and acidity inside the shell.

The step that matters

Folding and baking the pastry shells. Edges must be sealed well, or the pastry may open or leak filling. Baking the pastry fully until golden and crisp matters because the shell must cool and stay firm enough to hold the cream.

Swap the apricot

How well each one fits the dish's main ingredients (cream, sugar, pistachio, nuts, egg):
