Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Brandy Snap Creams

Ingredients

Directions

The book says “a slow oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Make the mixture

  1. In a saucepan, combine butter, sugar, and syrup.

  2. Cook slowly until the sugar dissolves.

  3. Stir in flour and ginger.

  4. Cook for five minutes while stirring continuously.

Bake and shape

  1. Drop teaspoonfuls of the mixture onto a well-oiled baking sheet.

  2. Bake in a slow oven (300°F/150°C) until golden brown.

  3. While hot, quickly mold them around oiled cornet molds or the oiled handle of a wooden spoon.

Fill and serve

  1. Once cool, fill with sweetened and flavored whipped cream using a vegetable rose forcer.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat for a rich flavor and a crisp, tender texture in the snaps.
Cane sugar
Provides sweetness and helps the mixture spread and turn crisp as it bakes.
Golden syrup
Adds sweetness and moisture, helping the snaps stay flexible long enough to shape.
Flour
Gives the snaps structure as the mixture sets during baking.
Ground ginger
Adds warm spice aroma to the snaps.
Double cream
Forms the rich, whipped filling that fills the cooled snaps.

The step that matters

Shape the snaps while hot. Brandy snaps set and turn brittle as they cool, so they must be shaped right after baking while still pliable. If they cool first, they crack instead of curling around the molds.

Swap the ginger

How well each one fits the dish's main ingredients (butter, sugar, syrup, flour, cream):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Jalapenofits better
  4. Gingerthe original

Fit is the average pairing score against butter, sugar, syrup, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
