What each ingredient does

Eel
Forms the main body of the dish, which is rolled and cooked whole.
Vinegar
Adds acidity that sharpens flavour and helps preserve the pickle.
Salt
Seasons the eel and helps draw flavour through the flesh during cooking.

The step that matters

Boil in salt and water until cooked. Boiling must be stopped once the eel is cooked through, because overcooking toughens the protein and makes the flesh dry and stringy.
