Why it works: Lemon and angelica match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 189 recipes. Both carry (e,e)-2,4-decadienal, which smells fatty, deep fried. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens with water and heat to give the cream its body.
Castor sugar
Sweetens the dish and helps draw juice from the strawberries.
Cream
Adds richness and, whipped, a light airy texture.
Fresh strawberries
Provide the fruit flavour, sweetness and acidity at the base of the dish.

The step that matters

Boiling the tapioca. Tapioca must be cooked long enough for the starch granules to fully swell and turn translucent; undercooked tapioca stays chalky and firm. Stir gently so it does not scorch on the bottom of the pan.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, angelica):

  1. Vanillafits better
  2. Lemonthe original
  3. Raisinfits less well
  4. Strawberryfits less well

Fit is the average pairing score against sugar, cream, angelica. Candidates are from the same food group and used in at least 100 recipes.
