Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Lemon Cake
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Make the batter
Whip the eggs until thick like batter.
Add the sugar, grated lemon rind, and juice of half the lemon.
Mix the two flours and gradually beat them in.
Pour into a flat cake tin lined with buttered paper.
Bake in a moderate oven at 350°F (175°C) for about 30 minutes.
Fill and ice
When cold, split the cake through the middle with a sharp knife.
Spread with lemon curd, then put the two halves back together.
Cover with royal icing and smooth with a knife dipped in boiling water.
Optionally, decorate with Vienna icing using a piping bag.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whipped to a thick batter-like foam, they trap air and give the cake its light structure.
- All-purpose flour
- Forms the main structure of the cake as its proteins set during baking.
- Castor sugar
- Sweetens the cake and helps keep the crumb tender and moist.
- Lemon curd
- Adds moisture and concentrated lemon flavour between the cake layers.
The step that matters
Whipping the eggs until thick. Whipped eggs hold the air that makes the cake rise and turn light. If they are under-whipped, the batter stays dense and the cake bakes up heavy and flat.
Swap the lemon
How well each one fits the dish's main ingredients (flour, sugar, egg):
- Raisinfits better
- Vanillafits better
- Lemonthe original
- Figfits about as well
Fit is the average pairing score against flour, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
