  2. Line a pie dish with thin pastry.

Make the filling

  1. Beat the butter and sugar together until creamy.

  2. Add four beaten eggs and chopped candied peel to the mixture.

  3. In a separate bowl, make a custard by combining the milk and two eggs.

  2. Bake for one hour.

  3. Serve with fruit sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and set the custard, giving the pudding its structure.
Fresh butter
Adds richness and a tender texture to the filling.
Castor sugar
Sweetens the filling and, creamed with butter, traps air for a lighter crumb.
Milk
Provides the liquid that turns the eggs into a custard, adding moisture.
Candied orange and lemon peel
Adds citrus aroma and a bright, slightly tart flavour.

The step that matters

Beat the butter and sugar until creamy. Creaming softens the butter and works sugar into it, trapping air bubbles that lighten the texture. Under-beating leaves a dense pudding.

Swap the orange

How well each one fits the dish's main ingredients (sugar, butter, egg, milk, lemon):

  1. Vanillafits better

  3. Peachfits about as well
  4. Orangethe original

Fit is the average pairing score against sugar, butter, egg, milk, lemon. Candidates are from the same food group and used in at least 100 recipes.
