Raspberry Cream

Ingredients

Directions

Prepare the raspberry juice

  1. Mash the raspberries gently.

  2. Let the raspberries drain.

  3. Sprinkle a little sugar over the raspberries to produce more juice.

Make the cream mixture

  1. Combine the raspberry juice with cream.

  2. Sweeten the mixture to taste.

  3. If desired, add milk to the mixture to prevent curdling.

  4. For best results, use raspberry jelly instead of jam if fresh fruit is unavailable.

  5. Alternatively, boil 1 ounce of isinglass in 3 pints of cream and milk for 15 minutes until melted.

  6. Strain the mixture into a basin.

  7. Let the strained mixture cool.

Finish and set

  1. Add raspberry juice or syrup to the cooled mixture.

  2. Stir until well combined.

  3. Sweeten the mixture.

  4. Add a glass of brandy.

  5. Whisk until three parts cold.

  6. Pour the mixture into a mold.

  7. Refrigerate until completely cold.
