Giblet Pie

Ingredients

Directions

  1. Clean and blanch the giblets, wings, feet, head, and neck in boiling water. Remove the skin from the feet and beak.

  2. In a stewpan, melt ½ cup of butter with the sliced onion, bay leaf, a pinch of coarse sea salt, pepper, and sugar until the onion is brown.

  3. Add the giblets and head (cut in half) to the stewpan and cook for about 3 minutes, stirring occasionally.

  4. Pour in nearly 1 quart of boiling water and let it stew gently for 2 hours. Remove from heat and let cool.

  5. In a pie dish, place a piece of steak at the bottom, then layer the giblets and liver on top, followed by another piece of steak.

  6. Add the liquor from the stewed giblets, season, and cover with pie paste.
