What each ingredient does

Vegetable marrow
Forms the bulk of the dish and carries the soft, mild texture once cooked.
Onions
Add sweetness and aroma as they soften gently in the butter without browning.
Butter
Adds richness and carries the flavour of the onions across the dish.

The step that matters

Cook the onions without browning. Cooking the onions gently over moderate heat softens them and draws out their sweetness. High heat browns them, which adds bitter, toasted notes that change the intended mild flavour.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original
