Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut thin slices of white bread to cover the bottom and sides of a baking dish.

  2. Rub the bread with butter.

  3. Layer thin slices of apples in the dish, sprinkling sugar and bits of butter between layers.

  4. Soak additional thin slices of bread in warm milk.

Assemble and bake

  1. Place a plate and weight on top to press the bread onto the apples.

  2. Bake in a slow oven at 300°F (150°C) for three hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White bread
Forms the structure of the dish, holding its shape as it bakes.
Butter
Adds richness and helps the bread brown and crisp at the edges.
Apples
Provide the main fruit filling, softening and becoming tender as they bake.
Sugar
Adds sweetness and helps the apples caramelize slightly during baking.
Milk
Moistens the bread and helps it soften and bind to the apples.

The step that matters

Pressing the bread onto the apples. Pressing with a plate and weight keeps the layers compact and in contact with the fruit, so the bread soaks up juices and the charlotte holds together when served rather than collapsing into loose pieces.

Swap the apple

How well each one fits the dish's main ingredients (bread, butter, sugar, milk):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Applethe original

Fit is the average pairing score against bread, butter, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
