What each ingredient does

Cod fish
Provides the main flesh, which firms and flakes as it cooks.

The step that matters

Soaking the cod slices in the saltwater mixture for 30 minutes. Salt penetrates the flesh over time and firms it, so soaking too long can leave the fish overly salty and dense.
