What each ingredient does

Pigeons
Provide the main meat, which cooks gently in the stew until tender.
Butter
Carries the seasoning inside the birds and adds richness to the finished sauce.
Gravy
Forms the base of the sauce, giving body and savoury depth.
White wine
Adds acidity that brightens the rich gravy and sauce.
Oysters
Add a briny, savoury flavour to the finished stew.
Pickled mushrooms
Add acidity and tangy flavour that contrast with the rich sauce.

The step that matters

Stew gently until cooked through. Boiling vigorously toughens the meat and makes the pigeon fibres dry and stringy. A gentle simmer lets the connective tissue soften slowly, keeping the meat tender and the sauce clear.

Swap the mace

How well each one fits the dish's main ingredients (pepper, clove, butter, white wine, lemon, onion, mushroom):

  1. Thymefits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against pepper, clove, butter, white wine, lemon, onion, mushroom. Candidates are from the same food group and used in at least 100 recipes.
