Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare and fill

  1. Prepare a puff pastry crust.

  2. Cut the lamb or veal into pieces.

  3. Season the pieces with pepper, coarse sea salt, mace, cloves, and nutmeg.

  4. Layer the meat in the crust with lamb stones, oysters, force-meat balls, hard-boiled egg yolks, and boiled asparagus tops.

  5. Dot the filling with butter.

  6. Cover with the pastry lid.

Bake

  1. Place in a preheated oven at 400°F (200°C) for 1.5 hours.

Make the gravy and serve

  1. Mix the gravy, oyster liquor, red wine, and grated nutmeg in a separate bowl.

  2. Stir in the beaten egg yolks and keep stirring until it boils.

  3. Pour the mixture into the pie.

  4. Cover with the lid again.

  5. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb or veal
Provides the main meaty body and savoury flavour of the filling.
Butter
Adds richness and helps the pastry brown and become flaky.
Egg yolks
Enrich the gravy and thicken it as they heat and set.
Oysters
Add a briny, savoury depth to the filling and its liquor.
Red wine
Adds acidity and depth to the gravy.
Puff pastry
Forms a crisp, layered crust that encloses the filling.

The step that matters

Stirring the egg yolks into the hot gravy. Egg yolks can scramble or curdle if they heat too quickly. Constant stirring spreads the heat evenly, so the yolks thicken the gravy smoothly as the proteins set.

Swap the mace

How well each one fits the dish's main ingredients (lamb, pepper, clove, nutmeg, oyster, meat, egg):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against lamb, pepper, clove, nutmeg, oyster, meat, egg. Candidates are from the same food group and used in at least 100 recipes.
