Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the batter and add richness through their fat and emulsifying proteins.
Egg whites
Add structure and lightness to the batter as they set during frying.
Cream
Adds richness and moisture, giving the batter a soft, tender texture.
Flour
Thickens the batter so it holds its shape when fried.
Apples
Provide moisture and fruity sweetness inside the crisp fritter.

The step that matters

Fry spoonfuls of the batter in hot oil until golden brown.. If the oil is not hot enough, the batter absorbs oil and turns greasy instead of crisp. Frying until golden brown means the surface has browned through the Maillard reaction, which adds flavor and color.
