Oyster Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove gills from oysters and strain the liquor.

  2. Slice the kidney fat thinly and season with white pepper, salt, mace, and grated lemon peel.

Assemble and bake

  1. Layer the seasoned fat in a pie dish, add oysters and their liquor, and season again.

  2. Add the marrow from the bones on top.

  3. Create a border of puff pastry around the edge of the dish, cover with more pastry, and bake at 400°F (200°C) for about 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine oysters
Provide the main filling and their briny liquor adds moisture and savory flavor.
Kidney fat from a loin of veal
Melts during baking to add richness and moisture to the filling.
Marrow from 2 bones
Adds rich, fatty body that enriches the filling as it cooks.
Puff pastry
Forms a flaky, crisp crust that browns in the oven and encloses the filling.

The step that matters

Create a border of puff pastry around the edge of the dish. Puff pastry rises and browns only if its edges are sealed well and it reaches a hot oven; a poor seal lets steam escape and the crust bakes flat and soggy.

Swap the white pepper

How well each one fits the dish's main ingredients (oyster, white wine, veal, mace, lemon):
