What each ingredient does

Cream
Whisked into a froth, it forms the light, airy layers of the pudding.
Naples biscuits
Soak up the wine and cream, giving the pudding its soft, cake-like body.
Red currant jelly
Adds sweetness and a tart fruit flavour between the layers.
White wine
Adds acidity and aroma that cut through the richness of the cream.

The step that matters

Whisking the cream to a froth. Cream must be whipped just until it holds a light, foamy structure. Over-whipping turns it grainy and buttery, and under-whipping leaves the layers flat and watery.

Swap the red currant
