Potato Wall, or Edging, to Serve Round Fricassee of Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Shape the wall

  1. Mash the desired amount of potatoes with a good piece of butter.

  2. Using the bowls of two silver spoons, shape the mashed potatoes into a wall 2.5 inches high within the rim of the dish.

  3. Make the upper part thinner than the lower and smooth it out.

Glaze and bake

  1. Brush the entire surface with beaten egg.

  2. Place in a 350°F (175°C) oven until hot and slightly colored.

What each ingredient does

Potatoes
Form the bulk of the wall, giving a soft, moist mash that holds its shape.
Butter
Adds richness and fat, making the mash smoother and more flavorful.
Egg
Brushed on top, it promotes browning and a glossy surface as it bakes.

The step that matters

Make the upper part thinner than the lower and smooth it out. A thicker base gives the wall support so it does not slump, while a thinner top heats through and browns more evenly. Smoothing removes cracks where the egg glaze could pool unevenly.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg):

  1. Asparagusfits better
  2. Chivefits better
  3. Leekfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, egg. Candidates are from the same food group and used in at least 100 recipes.
