To Pot Lobsters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and bake

  1. Half boil the lobsters.

  2. Remove the meat and cut it into small bits.

  3. Season the meat with mace, white pepper, nutmeg, and coarse sea salt.

  4. Press the mixture into a pot.

  5. Cover with butter.

  6. Bake at 350°F (175°C) for half an hour.

Assemble and finish

  1. Add the spawn to the pot.

  2. Once cooled, remove the lobster.

  3. Place it in pots with some of the butter.

  4. Beat additional butter with some of the spawn in a mortar.

  5. Mix the beaten butter and spawn with enough to cover the pots.

  6. Strain the mixture.

  7. Add cayenne if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Provides the main body and sweet seafood flavour of the dish.
Butter
Adds fat and richness, carrying flavour and keeping the mixture moist.
Mace
Adds a warm, delicate aroma to the seasoned lobster.
Nutmeg
Adds a warm, sweet aroma that complements the seafood.
White pepper
Adds gentle heat and a sharp, earthy note without dark specks.

The step that matters

Half boil the lobsters. Only a partial boil leaves the meat tender enough to finish gently in the oven. Boiling fully toughens the proteins, so the meat turns dry and firm once baked.

Swap the white pepper
