What each ingredient does

Carrot
Provides the bulk and body of the pudding, along with natural sweetness and moisture.
Egg yolks
Enrich the custard and, as they set in the oven, give it a firm, sliceable structure.
Egg whites
Help the mixture set and add lightness to the baked pudding.
Cream
Adds richness, fat and a smooth, tender texture to the custard.
Sugar
Sweetens the pudding and helps the surface brown lightly when dusted and baked.

The step that matters

Bake until set. Egg proteins set at moderate heat, and overbaking pushes them too far, causing the custard to curdle, weep liquid, or turn grainy. Check for a set centre rather than baking to a fixed time.

Swap the carrot

How well each one fits the dish's main ingredients (biscuit, egg, cream, orange, nutmeg, sugar):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Spinachfits better
  4. Carrotthe original

Fit is the average pairing score against biscuit, egg, cream, orange, nutmeg, sugar. Candidates are from the same food group and used in at least 100 recipes.
