A Charlotte

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Rub the bottom and sides of a baking dish with ¼ cup of butter.

Assemble and bake

  1. Layer thin slices of apples in the dish, sprinkling sugar and bits of butter between layers until full.

  2. Soak enough thin slices of bread in warm milk to cover the apples, placing a plate and a weight on top to keep the bread pressed down.

  3. Bake for 3 hours.

What each ingredient does

White bread
Forms the structure of the charlotte, softening into a tender, custard-like layer as it soaks and bakes.
Butter
Adds fat and richness, coating the dish and enriching the layers so they brown gently.
Apples
Provide moisture and tartness that soften during the long bake, giving the dish its fruit flavor.
Sugar
Adds sweetness and helps the apples caramelize and brown as they cook.
Warm milk
Soaks the bread, adding moisture so the layers become soft and cohesive.

The step that matters

Pressing the bread onto the apples. Weighting the bread keeps it submerged in the milk, so it soaks evenly and does not dry out or burn on top during the long bake.

Swap the apple

How well each one fits the dish's main ingredients (bread, butter, sugar, milk):

  1. Vanillafits better
