Potatoe Pasty

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil, peel, and mash the potatoes until smooth.

  2. Mix the mashed potatoes with coarse sea salt, black pepper, and butter.

  3. Make a dough with flour and roll it out thinly like a large puff pastry.

  4. Place the potato mixture on one half of the dough, then fold the other half over and pinch the edges to seal.

  5. Bake in a moderate oven at 350°F (175°C) until golden brown.
