Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that carries the coffee flavour and becomes the body of the drink.
Ground coffee
Supplies the coffee flavour and aroma as it steeps in the hot milk.
Isinglass
Acts as a fining agent that helps the coffee particles settle out, leaving the drink clearer.
Lisbon sugar
Adds sweetness, added to taste just before serving.

The step that matters

Letting it settle after the isinglass. Isinglass works by binding fine coffee particles so they sink. Stirring or moving the pot during the settling time stops this, leaving the drink cloudy and gritty.
